When photographing high contrasts you would use a meter to take a reading pointed at the dark area, then the lightest area and set your camera aperture to the average between the two. Nowadays you can take two digital photos, one focused on the dark, then on the light and join them as two layers in Photoshop to create one perfectly balanced picture.
Your quilt is lovely...dancing kelp! And the back is beautiful..you're right not to hide it.
